Ingredients
- 2-2.5 lbs spare ribs
- 1 tablespoon oregano
- 1/2 tablespoon garlic powder
- 1/2 tablespoon lemon pepper
- 1 tablespoon salt
- Zest of one lemon

Heat oven to 275° and mix together oregano, garlic powder, lemon pepper and salt.

Remove the silver skin from the back of the spare ribs and season with rub.

Wrap each rack (or cut each rack in half first, depending on their size) in a double layered foil packet. Basically, get a long sheet of foil out, fold it in half and lay your rack in the middle. Bring the long ends together and roll them down, then fold up the sides and place all packets on a baking sheet. These lovely little packets will keep all that tasty moisture in while the ribs roast.

Roast in the oven for 2-3 hours, depending on the thickness of your ribs.

After 2-3 hours, take the baking sheet out of the oven and increase the heat to 350°. Carefully remove the ribs from the foil packs and place the racks in a baking dish, pouring the rendered fat from the foil over top of them. Put back in the oven for 15 minutes.

Sprinkle lemon zest over the ribs as soon as they come out of the oven. Enjoy!
